Let's cook
- Bring a small pot of salted water to a boil. Add about 2 oz (a generous handful) of pasta and cook according to package directions until al dente, then drain and set aside.
- While the pasta cooks, heat 1 teaspoon of cooking oil in a skillet over medium-high heat.
- Add about 4 oz of ground chicken to the skillet. Season with salt and pepper, then break it apart with a spatula and cook for 5–6 minutes until fully browned and cooked through with no pink remaining.
- Pour in roughly 1/3 cup of pasta sauce over the cooked chicken. Stir to combine and reduce heat to medium-low. Let it simmer for 3–4 minutes until the sauce is heated through and slightly thickened.
- In a separate small pan, heat a tiny drizzle of cooking oil over medium heat. Crack 1 egg into the pan and fry to your preferred doneness — a runny yolk works especially well as a sauce here. Season lightly with salt and pepper.
- Plate the drained pasta, spoon the saucy chicken generously over the top, then lay the fried egg on top.
- Slice into the egg yolk just before eating to let it run down and enrich the sauce. Serve immediately.
