Let's cook

  1. Bring a small pot of well-salted water to a boil. Cook 80g (about 2.8 oz) of pasta until al dente according to package directions. Reserve 3 tablespoons of pasta water before draining.
  2. While pasta cooks, heat 1 teaspoon of cooking oil in a skillet over medium-high heat. Add 120g (about 4 oz) ground pork and break it apart with a spatula.
  3. Season the pork with 1/2 teaspoon each of cumin and smoked paprika (or your preferred dried spices), plus a generous pinch of salt and pepper. Cook until browned and cooked through, about 6-8 minutes. Remove from heat.
  4. Halve the avocado and scoop the flesh into a bowl. Mash it thoroughly with a fork until smooth and creamy.
  5. Stir 2 tablespoons of the reserved pasta water into the mashed avocado to loosen it into a saucy consistency. Season with salt, pepper, and a pinch of garlic powder or chili flakes if desired.
  6. Add the drained pasta to the skillet with the pork and toss together over low heat for 1 minute, adding a splash more pasta water if needed to loosen.
  7. Plate the pork pasta, spoon the avocado sauce generously on top, and finish with an extra crack of black pepper. Serve immediately.
