Spiced Pork Pasta with Creamy Avocado Sauce

Let's cook
- Bring a small pot of well-salted water to a boil. Cook 80g (about 2.8 oz) of pasta until al dente according to package directions. Reserve 3 tablespoons of pasta water before draining.
- While pasta cooks, heat 1 teaspoon of cooking oil in a skillet over medium-high heat. Add 120g (about 4 oz) ground pork and break it apart with a spatula.
- Season the pork with 1/2 teaspoon each of cumin and smoked paprika (or your preferred dried spices), plus a generous pinch of salt and pepper. Cook until browned and cooked through, about 6-8 minutes. Remove from heat.
- Halve the avocado and scoop the flesh into a bowl. Mash it thoroughly with a fork until smooth and creamy.
- Stir 2 tablespoons of the reserved pasta water into the mashed avocado to loosen it into a saucy consistency. Season with salt, pepper, and a pinch of garlic powder or chili flakes if desired.
- Add the drained pasta to the skillet with the pork and toss together over low heat for 1 minute, adding a splash more pasta water if needed to loosen.
- Plate the pork pasta, spoon the avocado sauce generously on top, and finish with an extra crack of black pepper. Serve immediately.
