Ginger Garlic Chicken & Potato Stir-Fry with Crunchy Peanuts

Let's cook

  1. Dice 2 medium potatoes into 1-inch cubes. Boil in salted water for 8-10 minutes until just fork-tender but still firm, then drain and set aside.
  2. While potatoes cook, shred or chop about 300g of pre-cooked Costco chicken into bite-sized pieces. Mince 3 cloves of garlic and grate a 1-inch knob of fresh ginger.
  3. Slice 3 stalks of celery on a diagonal into thin pieces. Roughly chop 40g of peanuts and set aside.
  4. Heat 2 tablespoons of cooking oil in a large skillet or wok over medium-high heat. Add the drained potatoes and pan-fry for 4-5 minutes, turning occasionally, until lightly golden and crispy. Season with salt and pepper, then remove to a plate.
  5. In the same skillet, add 1 tablespoon of butter. Once melted, sautΓ© the garlic and ginger over medium heat for 1 minute until fragrant, stirring constantly so they don't burn.
  6. Add the celery to the skillet and stir-fry for 2 minutes until slightly softened but still crisp. Add the chicken and toss everything together for 2-3 minutes until the chicken is heated through and coated in the garlic-ginger butter.
  7. Return the crispy potatoes to the skillet, add a pinch of sugar to balance the flavors, and toss everything together. Taste and adjust salt and pepper as needed.
  8. Divide between two plates, scatter the chopped peanuts generously over the top for crunch, and serve immediately.
