Ginger Garlic Chicken & Potato Stir-Fry with Crunchy Peanuts
Tender Costco chicken and golden potatoes tossed with crisp celery, fragrant ginger and garlic, and finished with crunchy peanuts for a satisfying one-pan dinner.

Let's cook
- Dice 2 medium potatoes into 1-inch cubes. Boil in salted water for 8-10 minutes until just fork-tender but still firm, then drain and set aside.
- While potatoes cook, shred or chop about 300g of pre-cooked Costco chicken into bite-sized pieces. Mince 3 cloves of garlic and grate a 1-inch knob of fresh ginger.
- Slice 3 stalks of celery on a diagonal into thin pieces. Roughly chop 40g of peanuts and set aside.
- Heat 2 tablespoons of cooking oil in a large skillet or wok over medium-high heat. Add the drained potatoes and pan-fry for 4-5 minutes, turning occasionally, until lightly golden and crispy. Season with salt and pepper, then remove to a plate.
- In the same skillet, add 1 tablespoon of butter. Once melted, sautΓ© the garlic and ginger over medium heat for 1 minute until fragrant, stirring constantly so they don't burn.
- Add the celery to the skillet and stir-fry for 2 minutes until slightly softened but still crisp. Add the chicken and toss everything together for 2-3 minutes until the chicken is heated through and coated in the garlic-ginger butter.
- Return the crispy potatoes to the skillet, add a pinch of sugar to balance the flavors, and toss everything together. Taste and adjust salt and pepper as needed.
- Divide between two plates, scatter the chopped peanuts generously over the top for crunch, and serve immediately.
