Sizzling Egg Fried Rice with Glazed Carrots

From the fridge
- leftover white rice
- 3 eggs
- half an onion
- a sad carrot
- soy sauce
Pantry staples
- cooking oil
- butter
- garlic
- salt & pepper

Let's cook
- Peel and dice the carrot into small cubes and finely chop the half onion. Mince 2 cloves of garlic.
- Heat 1 tablespoon of cooking oil in a large skillet or wok over medium-high heat. Add the onion and carrot and stir-fry for 4 minutes until the onion softens and the carrot starts to caramelize at the edges.
- Add the minced garlic and stir for 30 seconds until fragrant. Push everything to one side of the pan.
- Add 1 teaspoon of butter to the empty side of the pan, then crack all 3 eggs in. Scramble them gently until just set, then break them up and mix into the vegetables.
- Add the leftover white rice, breaking up any clumps with a spatula. Press the rice against the hot pan and let it sit for 1 minute to get a little crispy, then toss and repeat.
- Drizzle 3 tablespoons of soy sauce evenly over the rice. Toss everything together thoroughly and stir-fry for another 2 minutes until the rice is evenly coated and fragrant.
- Taste and adjust seasoning with a pinch of salt and a few cracks of black pepper. Serve immediately straight from the pan.
