Sizzling Egg Fried Rice with Glazed Carrots

  • leftover white rice
  • 3 eggs
  • half an onion
  • a sad carrot
  • soy sauce

Pantry staples

  • cooking oil
  • butter
  • garlic
  • salt & pepper
  • soy sauce

Let's cook

  1. Peel and dice the carrot into small cubes and finely chop the half onion. Mince 2 cloves of garlic.
  2. Heat 1 tablespoon of cooking oil in a large skillet or wok over medium-high heat. Add the onion and carrot and stir-fry for 4 minutes until the onion softens and the carrot starts to caramelize at the edges.
  3. Add the minced garlic and stir for 30 seconds until fragrant. Push everything to one side of the pan.
  4. Add 1 teaspoon of butter to the empty side of the pan, then crack all 3 eggs in. Scramble them gently until just set, then break them up and mix into the vegetables.
  5. Add the leftover white rice, breaking up any clumps with a spatula. Press the rice against the hot pan and let it sit for 1 minute to get a little crispy, then toss and repeat.
  6. Drizzle 3 tablespoons of soy sauce evenly over the rice. Toss everything together thoroughly and stir-fry for another 2 minutes until the rice is evenly coated and fragrant.
  7. Taste and adjust seasoning with a pinch of salt and a few cracks of black pepper. Serve immediately straight from the pan.
