Sticky Baked Butter Wings with Toasted Bun Crumbs

Let's cook
- Preheat your oven to 425°F (220°C). Pat 6-8 chicken wings completely dry with paper towels — this is key for crispiness without any oil.
- In a bowl, mix 2 tablespoons flour, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon paprika, 1/2 teaspoon garlic powder, and 1/4 teaspoon cayenne. Toss the wings in this dry mixture until fully coated.
- Melt 2 tablespoons of butter and brush a baking sheet generously. Lay the coated wings on the sheet, then drizzle another tablespoon of melted butter over the tops.
- Bake wings for 40-45 minutes, flipping once halfway through, until deep golden and crispy.
- While wings bake, tear 2 hamburger buns into rough chunks. In a dry skillet over medium heat, melt 1 tablespoon butter, then add the bun pieces with a pinch of salt, 1/2 teaspoon dried thyme or oregano, and 1 teaspoon sugar. Toast, stirring often, for 5-6 minutes until golden and caramelized.
- In the last 5 minutes of baking, brush wings with a glaze of 1 tablespoon melted butter mixed with 1/2 teaspoon sugar and a pinch of smoked paprika. Return to oven to caramelize.
- Arrange wings on plates with the buttery toasted bun crumbs scattered alongside or on top as a rustic crouton-style side. Season to taste and serve immediately.
