Let's cook
- Bring a pot of salted water to a boil and cook 160g of pasta according to package instructions. Reserve 60ml of pasta water before draining.
- While the pasta cooks, zest half an orange and juice the whole orange into a small bowl. Whisk in 1.5 tablespoons of mustard, 1 teaspoon of sugar, and 1 teaspoon of vinegar to make the glaze. Set aside.
- Slice 1 medium onion into thin half-moons and dice 1 medium tomato. Mince 2 garlic cloves.
- Heat 1 tablespoon of cooking oil and 1 tablespoon of butter in a large skillet over medium heat. Add the onions with a pinch of salt and cook, stirring occasionally, for 8-10 minutes until soft and golden.
- Add the garlic and tomato to the skillet and cook for 2 minutes until the tomato begins to soften.
- Pour the orange-mustard glaze into the skillet and stir to combine. Add the drained pasta and toss well, adding a splash of reserved pasta water to loosen the sauce to a silky consistency. Season generously with salt and pepper.
- Divide the pasta between two plates or bowls, then immediately grate or crumble a generous handful of cheese over each serving so it melts slightly into the hot pasta. Serve right away.
