Golden Peanut Butter Melt Toasties with Almond-Crusted Cheese
Crispy buttered toast layered with creamy peanut butter and topped with pan-fried cheese crusted in crunchy toasted almonds — a rich, satisfying snack or light meal for two.

Let's cook
- Roughly chop the almonds and spread them on a small plate. Cut 4 thick slices of cheese and press each slice firmly into the chopped almonds so they stick to both sides.
- Heat a non-stick pan over medium heat and add a small knob of butter. Once foaming, add the almond-crusted cheese slices and cook for 1-2 minutes per side until golden and the almonds are toasted. Remove and set aside.
- Wipe the pan clean, add another knob of butter, and place 4 slices of bread in the pan (in batches if needed). Toast on medium heat for 1-2 minutes per side until golden and crisp.
- Spread a generous layer of peanut butter on 2 of the toasted bread slices while they are still warm so it softens and melts slightly into the bread.
- Splash 1-2 tablespoons of milk into the warm (now empty) pan over low heat, add a small piece of butter and a pinch of salt and pepper, and stir for 30 seconds to create a quick pan sauce.
- Place one or two almond-crusted cheese slices on top of each peanut butter toast, drizzle the warm buttery pan sauce over the top, and season lightly with salt and pepper.
- Top each with a plain toasted bread slice to make an open or closed sandwich, serve immediately while the cheese is warm and gooey.
