Smoky Beef & Kale Sweet Potato Bowl
A hearty, satisfying bowl of caramelized sweet potato and wilted garlicky kale topped with juicy seasoned ground beef — simple comfort food at its best.

Let's cook
- Peel and dice one medium sweet potato into roughly 1-inch cubes. Toss with a drizzle of cooking oil, a pinch of salt, and a pinch of pepper.
- Heat a skillet over medium-high heat. Add the sweet potato cubes and cook for 12-15 minutes, stirring occasionally, until tender and golden brown on the edges. Transfer to a bowl and set aside.
- While the sweet potato cooks, strip 2-3 large kale leaves from their stems and roughly chop the leaves into bite-sized pieces. Mince 2 cloves of garlic.
- In the same skillet over medium-high heat, add a small drizzle of oil and cook about 150g (roughly 5 oz) of ground beef, breaking it apart with a spoon. Season well with salt and pepper. Cook until browned and cooked through, about 5-6 minutes. Push the beef to one side of the pan.
- Add the minced garlic to the empty side of the pan and let it sizzle for 30 seconds until fragrant, then stir it into the beef.
- Add the chopped kale directly to the pan on top of the beef. Toss everything together and cook for 2-3 minutes until the kale is wilted and bright green, scraping up any browned bits from the pan.
- Spoon the sweet potato into your bowl, then pile the beef and kale mixture on top. Season with a final pinch of salt and pepper to taste and serve immediately.
