Smoky Beef & Kale Sweet Potato Bowl

A hearty, satisfying bowl of caramelized sweet potato and wilted garlicky kale topped with juicy seasoned ground beef — simple comfort food at its best.

Let's cook

  1. Peel and dice one medium sweet potato into roughly 1-inch cubes. Toss with a drizzle of cooking oil, a pinch of salt, and a pinch of pepper.
  2. Heat a skillet over medium-high heat. Add the sweet potato cubes and cook for 12-15 minutes, stirring occasionally, until tender and golden brown on the edges. Transfer to a bowl and set aside.
  3. While the sweet potato cooks, strip 2-3 large kale leaves from their stems and roughly chop the leaves into bite-sized pieces. Mince 2 cloves of garlic.
  4. In the same skillet over medium-high heat, add a small drizzle of oil and cook about 150g (roughly 5 oz) of ground beef, breaking it apart with a spoon. Season well with salt and pepper. Cook until browned and cooked through, about 5-6 minutes. Push the beef to one side of the pan.
  5. Add the minced garlic to the empty side of the pan and let it sizzle for 30 seconds until fragrant, then stir it into the beef.
  6. Add the chopped kale directly to the pan on top of the beef. Toss everything together and cook for 2-3 minutes until the kale is wilted and bright green, scraping up any browned bits from the pan.
  7. Spoon the sweet potato into your bowl, then pile the beef and kale mixture on top. Season with a final pinch of salt and pepper to taste and serve immediately.
