Let's cook
- Thaw the 6 frozen burger patties on the counter for 10–15 minutes so they cook evenly. While waiting, cook 12 rashers of bacon in a large skillet over medium heat until crispy, then set aside on paper towels to drain.
- Halve and pit the 3 avocados. Scoop the flesh into a bowl, season generously with salt and pepper, and mash with a fork to a chunky, creamy consistency. Set aside.
- Heat a large cast-iron skillet or heavy pan over high heat and add a thin layer of cooking oil. Season both sides of each burger patty with salt and pepper.
- Working in batches if needed, place patties in the hot skillet and immediately press them down firmly with a spatula to smash them flat. Cook for 2–3 minutes until a dark crust forms on the bottom.
- Flip each patty, immediately lay a slice of cheese on top of each one, and cook for a further 1–2 minutes until the cheese is fully melted and the burger is cooked through.
- While the last batch finishes, split the 6 buns and butter the cut sides generously. Toast them butter-side down in a separate pan over medium heat for 1–2 minutes until golden.
- Assemble the burgers: spread a generous layer of smashed avocado on the bottom bun, add the cheesy patty, lay 2 rashers of crispy bacon on top, then close with the top bun. Serve immediately.
