Ham & Spinach Skillet Pizza with Avocado Smash

Let's cook
- Mix 1/4 teaspoon each of dried oregano and garlic powder into 6 tablespoons of tomato sauce and set aside.
- Heat a 10-inch oven-safe skillet or non-stick pan over medium heat with 1 tablespoon of cooking oil. Add 2 large handfuls (about 2 cups) of spinach and sauté for 2 minutes until wilted. Season with salt and pepper, then remove from the pan and set aside.
- Wipe the pan lightly, add another teaspoon of oil, and spread it across the base. Layer 3 large slices of black forest ham (roughly torn) across the bottom of the pan to form a rustic crust base, overlapping slightly.
- Spread the seasoned tomato sauce evenly over the ham layer, then distribute the wilted spinach on top.
- Scatter 3/4 cup of shredded old cheddar evenly over the spinach. Cover the pan with a lid or foil and cook on medium-low heat for 8-10 minutes until the cheese is fully melted and the ham edges are slightly crisp.
- While the skillet pizza cooks, mash the half avocado in a small bowl with a pinch of salt, pepper, and a pinch of dried chili flakes if desired.
- Slide the skillet pizza onto a cutting board or serve directly from the pan. Dollop the smashed avocado across the top and scatter 6-8 fresh basil leaves over everything.
- Slice into thirds and serve immediately, making sure each portion gets a generous bit of every layer.
