Let's cook

  1. Add 1/2 cup rolled oats and 1 cup almond milk to a small saucepan with a tiny pinch of salt. Bring to a medium heat and stir frequently for 4-5 minutes until the oats absorb the milk and reach a creamy, porridge-like consistency.
  2. Remove the pan from heat and stir in 1 scoop (about 30g) of whey protein powder until fully combined and smooth. The residual heat will thicken it slightly.
  3. While the oats cook, place 1/4 cup frozen blueberries in a small microwave-safe bowl and microwave for 60 seconds until warmed through and slightly jammy. Set aside.
  4. Core and slice half an apple into thin wedges. These will be used fresh as a topping for crunch.
  5. Pour the protein oats into a serving bowl. Immediately swirl in 1 tablespoon of peanut butter, letting it melt into ribbons across the oats.
  6. Top with the warm blueberries, a small handful of fresh raspberries, and the apple slices arranged neatly on one side.
  7. Break off about 15g of the dark chocolate bar and melt it by microwaving in 20-second bursts, stirring between each, until smooth. Drizzle over the bowl using a spoon.
  8. Finish with a light sprinkle of shredded coconut over everything and serve immediately.
