Sizzling Steak & Sausage Hash with a Fried Egg

Let's cook
- Slice 1 cheddar sausage into half-inch coins and cut your steak (about 4-5 oz) into small 1-inch bite-sized cubes. Pat the steak dry and season generously with salt and pepper.
- Heat 1 tablespoon of cooking oil in a skillet over medium-high heat until shimmering. Add the sausage coins in a single layer and cook for 2-3 minutes per side until browned and slightly crispy, then transfer to a plate.
- In the same skillet, add the steak cubes and sear undisturbed for 1-2 minutes to get a good crust, then toss and cook another 1-2 minutes for medium doneness. Season with a pinch more salt and pepper, then transfer to the plate with the sausage.
- Reduce the heat to medium-low. Add a small splash of cooking oil to the pan if needed, then crack 1 egg directly into the skillet. Season the egg lightly with salt and pepper and fry to your liking β about 2-3 minutes for a runny yolk.
- While the egg cooks, place one or two slices of sourdough bread directly on a second burner over medium heat (or in a toaster) and toast until golden and crispy.
- Plate the steak and sausage hash together in a pile, slide the fried egg on top, and drizzle everything generously with hot sauce.
- Serve immediately alongside the toasted sourdough for scooping and dunking.
